Processed food covers anything cooked, canned, packaged or changed in nutritional composition — fortified, preserved or prepared. The additive system is what holds quality across that range.
The spectrum runs from minimally processed (bagged spinach, cut vegetables, roasted nuts) through food processed at peak to lock in freshness (canned tomatoes, frozen vegetables, canned tuna), to products with ingredients added for flavour and texture, ready-to-eat items, and finally pre-made meals.

Disodium Phosphate (DSP) An emulsifying salt that keeps fat and water from separating through cheese-making, for a richer, creamier result. In evaporated milk it stops butterfat separating in the can and prevents gelling.
DSP in cream processing In heavy whipping cream DSP binds to the natural minerals in milk, which stops the cream becoming unmanageable and coating equipment during processing.
Ferrous Fumarate An iron source used to fortify foods, including complementary foods for infants and young children. Iron delivered as fumarate is less well absorbed than as sulfate, so fortification levels are set accordingly.
Glucono Delta Lactone (GDL) A naturally occurring acidity regulator that lowers pH, slows deterioration, prevents discolouration, and works as an anti-caking and raising agent.
