Natural Humectant

Binds free water inside the product so baked goods, confectionery and processed meat stay soft and keep longer.

Humectants bind the moisture already in a food and draw more from the air. That hygroscopic behaviour keeps products from drying out and stops the sugar in confectionery crystallising — a moisture-control effect rather than a preservative one.

The distinction that matters is between water content and water activity. Bacterial growth follows the free water in a product, not its total water. Drying cuts both; a humectant cuts only the free water, which is why texture survives.

The humectant we supply

Water content vs water activity Drying reduces both. A humectant reduces only the free water — the water content stays where it is, while the water available to microbes falls.
Why free water matters The shelf life of intermediate-moisture foods is limited by fungal and bacterial growth, and that growth tracks water activity. Less free water, less to grow on.
Betaine Anhydrous A compound that occurs naturally in beets, spinach, cereals, seafood and wine, used as a natural humectant in food and feed formulations.
Where it earns its place Bread and baked goods stay fresh longer, chewing gum, chocolate and cookies dry out more slowly, and bakery fillings stop migrating moisture into the layers around them.
