Baking powder is a complete leavening agent: it carries both the base — sodium bicarbonate — and the acid that reacts with it, releasing carbon dioxide so baked goods rise light and open.

Which acid you choose decides when that gas arrives. A fast acid reacts on mixing; a slow one holds its reaction back until the dough meets heat. Most industrial systems use both.

The leavening acids we supply

We stock Monocalcium Phosphate (MCP) as the fast half and Sodium Acid Pyrophosphate (SAPP) as the slow half, so a double-acting system can be built from a single supplier. Both carry a slightly bitter aftertaste in overdose, which is why the soda-to-acid ratio — not just the dose — is the thing to get right.

Monocalcium PhosphateSodium Acid Pyrophosphate
Monocalcium Phosphate (MCP) A fast-acting leavening acid, used with sodium bicarbonate. Its neutralising value sets the ratio of soda to acid — adjusting that ratio raises or lowers the pH of the finished product. Used in phosphate flour alone, and in self-rising flour with sodium bicarbonate.
Sodium Acid Pyrophosphate (SAPP) A slow-reacting leavening acid, ideal for refrigerated doughs, cakes, muffins and pancake mixes where a delayed release is wanted. Often paired with a fast acid such as MCP in double-acting powder.
Also a chelating agent SAPP chelates iron, which is why it also appears in processed potato products to prevent discolouration.
Single vs double acting Single-acting powders release their carbon dioxide in one stage and are largely a manufacturing choice; double-acting systems combine a fast and a slow acid so the dough lifts twice.
