Each acid has a profile Malic gives a lingering tartness, fumaric a sharp one at very low use level, lactic a mild dairy-compatible acidity, tartaric the sharpness associated with grape. The choice is sensory before it is chemical.
Solubility drives the choice Fumaric acid is the least soluble of the common food acids, which is exactly why it works in dry mixes where a soluble acid would react too early.
Buffering, not just acidifying Trisodium citrate and glucono delta lactone hold pH against drift rather than simply lowering it — the difference between an acidulant and a regulator.
pH as preservation Below the pH where spoilage organisms grow, acid does preservative work. That is a formulation lever, not an additive claim.
